From Bologna to Dubai
Born in Bologna to a family of chefs, Alessio's earliest memories are of kneading dough beside his grandmother in their century-old kitchen. The scent of fresh basil, the rhythm of rolling pins, and the warmth of family gatherings around handmade pasta shaped his understanding of what food truly means.
After training under Michelin-starred masters in Modena and Rome, Alessio brought his heritage to Dubai in 2019, creating Saffron&slate as a bridge between authentic Italian tradition and contemporary dining excellence.
